Baked sweet potato with Mayo Vegan Sauce, avocado, tomato and nuts

PREP TIME: 10’ 

COOK TIME: 40’

Ingredients for 2 servings:

500g sweet potato

Olive oil

Salt

Paprika

50g wild rocket

1 tomato, sliced

1/2 avocado, sliced

Mayo Vegan Sauce by Condito The Green Line

Raisins & nut mix

Method:

Cut the sweet potato into 1.5 cm slices (approximately). Brush them with olive oil and add salt and paprika. Bake on a baking tray lined with non-stick paper in a preheated oven at 200 °C for about 30 to 40 minutes, and then take them out to cool down.
Once the sweet potato slices reach room temperature, add the Mayo Vegan Sauce, tomato and avocado. Finally, sprinkle with a few nuts and raisins and top with wild rocket.
