Ingredients for 2 servings:
1 eggplant
1 zucchini
4 slices of whole wheat bread
120g Mayo Vegan Sauce with Smoked Chili Flakes
salt
pepper
paprika
oregano
olive oil
tomato
red cabbage
lettuce
rocket
Method:
Cut the eggplant and zucchini into thin slices. Season with salt, pepper, oregano, paprika and olive oil and bake in the oven at high heat for about 20 minutes.
Spread some Mayo Vegan Sauce with Smoked Chili Flakes on the bread slices and add the roasted vegetables. Then add tomato, red cabbage, lettuce, rocket, and season with salt and pepper. You can also try toasting the bread on the pan as well.
Serve and enjoy.
