Ingredients for 4 sandwiches:
8 slices of whole wheat toast
240 gr chickpeas, boiled
2 tbsp olive oil
1 tsp sweet paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp cumin
1/2 tbsp smoked paprika
1/4 tsp chili powder
1/2 tsp salt
black pepper
1/4 cup of Mayo Vegan Sauce with Smoked Chili Flakes by Condito The Green Line
1 cup chopped iceberg
1 tomato, cut into thin slices
Method:
Preheat the oven to 200°C. In a bowl, add the boiled chickpeas with the olive oil and all the spices. Mix together and spread on a baking sheet lined with non-stick paper. Bake in the oven for approximately 20 minutes.
In a bowl, add the chickpeas together with the Mayo Vegan Sauce with Smoked Chili Flakes and mix together using a fork. Try to mash the chickpeas as you mix these together to incorporate them into the mixture. Spread 1/4 of the chickpea mix on a slice of toast, add two slices of tomato, some chopped iceberg and cover with another slice of toast. Repeat the process for the remaining sandwiches.
