Ingredients for 4 serving:
For the sweet potatoes:
1 sweet potato, cubed
1 squash, cubed
2 tbsp olive oil
2 cloves garlic, finely chopped
1 tbsp sesame seeds
1 tbsp dry oregano
1/2 tsp smoked paprika
1/4 tsp cumin
salt and pepper
For the sauce:
4 tbsp Mayo Vegan Sauce by Condito The Green Line
2 tbsp basil pesto
To serve:
100 gr Italian Style grated Vegan Cheese Alternative by Condito The Green Line
2 spring onions, finely chopped
fresh herbs, finely chopped
Method:
Preheat the oven to 200 oC with the fan on. Place all the vegetables in a large bowl, add the olive oil, garlic, sesame seeds, oregano, paprika, cumin, salt, and pepper, and mix well. Transfer to an oven tray and roast for about 10 minutes, mix, continue roasting for another 10 minutes or until the vegetables are well cooked.
Prepare the sauce. Mix all the ingredients together until you have a homogeneous sauce.
When the vegetables are ready, add the italian style vegan cheese alternative, onion, herbs and the sauce you prepared, mix and serve.
