Ingredients for 5 crepes:
1 cup red lentils
2 cups water
salt
pepper
a vegan salad spread of your choice by Condito The Green Line
Method:
Put the red lentils in a bowl and let them soak for 3 hours. Transfer the ingredients (red lentils with water) to a blender and pulse for 3-4 minutes until you have a uniform mixture. Add salt and pepper.
Put a non-stick pan on medium heat. Optionally, grease its surface with a paper towel dabbed in olive oil. When hot, pour a spoonful of the mixture into the pan and spread it evenly using the bottom of a spoon. Once it takes on color, flip your crepe over. Repeat until the whole mixture is used up. The ingredients are enough for about 5 crepes.
Fill each crepe with the rest of the ingredients, spread your favorite Condito The Green Line vegan salad, and enjoy!
