Ingredients for 4 pita breads:
For the vegan gyro
2 large onions, sliced
4 tbsp olive oil
Salt
Pepper
300 gr mushrooms (mixed), chopped
1 tsp cumin
1 tsp dry coriander
1 tsp smoked paprika
1 tsp dry oregano
2 tbsp soy sauce
Fresh herbs, chopped
For serving
Mayo Vegan Sauce with Mild Mustard by Condito the Green Line
4 Cypriot pitas
Green salad leaves
1 tomato, sliced
Method:
Prepare the vegan gyro in a large pan. Add the onions, salt, pepper, 2 tbsp olive oil, close the lid and leave on low heat (with the lid closed) for about 10 minutes or until the onions are soft. Add the mushrooms, the remaining olive oil, cumin, coriander, paprika, oregano, soy sauce and cook for about 10 minutes or until the mushrooms are ready. When the mushrooms are ready, add the herbs and toss them together.
Place the pitas side by side, spread them with Mayo Vegan Sauce with Mild Mustard, add the green salad, the mushroom gyro, tomatoes, add a little more Mayo Vegan Sauce with Mild Mustard on top and serve.
