Cookies with cocoa and hazelnut cream

Ingredients for approximately 12 cookies:

 

For the cookies:

200 gr Mayo Vegan Sauce by Condito The Green Line

100 gr sugar

1 tsp vanilla syrup

220 gr self-raising flour

80 gr cocoa

½ tsp baking soda

 

For the filling:

2 tbsp Mayo Vegan Sauce by Condito The Green Line

100 gr hazelnuts

1 ripe banana (120 gr)

2 tbsp honey

2 tbsp cocoa

Method:

For the cookies, preheat the oven to 160°C and mix all the ingredients in a bowl, until you get a uniform dough.

Divide the dough into two pieces and roll out each piece into a sheet. Using a cookie cutter or a glass, cut out 12 cookies and follow the same process with the second sheet.

Bake the cookies for 12 minutes. The cookies will be relatively soft when you take them out of the oven.

For the filling, add all the ingredients to a food processor and blend them until you get a smooth cream.

Once the cookies have cooled, arrange half of them side by side and fill them with the hazelnut cream and top them with the rest of the cookies.
