Makes one large salad / serves 4:
For the salad:
400 gr. small boiled potatoes, halved
2 spring onions and their leaves
1 medium onion, finely chopped
100 gr. pickled cucumber, sliced
2 tbsp parsley, finely chopped
2 tbsp dill, finely chopped
For the sauce:
4 tbsp Mayo Vegan Sauce by Condito The Green Line
1 tbsp Condito mustard
juice of one lemon
salt and freshly ground black pepper
To serve:
Fresh herbs
Method:
Use a large bowl to prepare the sauce. Add the Mayo Vegan Sauce by Condito The Green Line, the mustard, lemon, salt, and pepper, and mix.
Then prepare the potato salad. In the bowl with the sauce we just prepared, add the spring onions, onion, herbs, pickled cucumbers, and potatoes, and mix. Divide the potato salad into portions and garnish with some fresh herbs.
