Makes one large salad / serves 4:
For the salad:
200 gr. couscous
2 tbsp olive oil
juice of 1 lemon
1 cucumber, sliced
20 cherry tomatoes, halved
2 peppers, cubed
1 onion, finely sliced
salt and pepper
For the sun-dried tomato sauce:
2 tbsp Mayo Vegan Sauce by Condito The Green Line
1 tbsp sun-dried tomato paste
1 tsp red wine vinegar
Method:
Prepare the couscous according to the package instructions. Add olive oil, lemon juice, salt, and pepper and let it rest until it reaches room temperature.
In a large bowl, add the cucumber, cherry tomatoes, peppers, onion, couscous (which is now cold), and stir.
Prepare the sauce. Add all the ingredients to a bowl and mix until you have a homogeneous sauce. Add the sauce to the salad and serve.
