Ingredients for 4 servings:
For the sauce:
4 tbsp Mayo Vegan Sauce by Condito The Green Line
1 tbsp red curry paste
For the salad:
300 gr boiled lentils
2 peppers, finely chopped
2 green onions, finely chopped
20 cherry tomatoes, cut in half
200 gr boiled corn
fresh herbs
For serving:
toasted bread
Method:
Prepare the sauce by mixing the Mayo Vegan Sauce with the red curry paste.
Use a large bowl to prepare the salad.
Add the lentils, peppers, onions, cherry tomatoes, corn, herbs and mix them together.
Serve with some toasted bread.
