Ingredients for approximately 4 pita sandwiches:
For 8 falafels
300gr chickpeas, boiled and ground
1 carrot, grated
1 large dry onion, grated
1 tsp cumin
1 tsp dried coriander
1 tsp dried oregano
1 cup oats
2 tbsp Mayo Vegan Sauce with Mild Mustard by Condito the Green Line
Salt
Pepper
For serving
4 Greek-style pitas
250 gr. Vegan Tzatziki by Condito The Green Line
Green salad leaves
Tomato slices
Method:
Use a large bowl to knead the falafel. Add the chickpeas, carrot, cumin, coriander, oregano, oats, Mayo Vegan Sauce with mild mustard, salt, pepper and mix together well. Shape the mixture into long falafels and bake in a preheated oven at 180oC for about 20 minutes or until they are ready.
Serve the falafel when thez are ready. Spread the pitas with Vegan Tzatziki, add the tomato, green salad leaves, the falafel and serve.
