Ingredients for 4 servings:
For the grilled mushrooms:
200 gr. finely chopped mushrooms
2 tbsp olive oil
2 cloves garlic, finely chopped
1 tbsp dry oregano
1/2 tsp smoked paprika
salt and pepper
sesame seeds
To serve:
4 tsp Mayo Vegan Sauce by Condito The Green Line
1 tomato, sliced
half cucumber, sliced
spinach
4 tortillas
Method:
Preheat the oven to 200oC with the fan on. Place all the mushrooms in a large bowl, add the olive oil, garlic, oregano, paprika, salt, and pepper, sesame seeds and mix well. Roast for about 10 minutes, mix, continue roasting for another 10 minutes or until the mushrooms are well cooked.
As soon as the mushrooms are ready, you can serve them. Mentally divide the tortilla into quarters and use a knife to carve one radius. Spread the Mayo Vegan Sauce on the entire tortilla. Place the mushrooms in the first quarter, the tomato in the second quarter, the cucumber in third quarter, and the spinach in the fourth quarter. Fold and place in a hot oven for 5 minutes, until the tortilla turns golden brown.
