Ingredients for 4 servings:
For the soy kebab
1 cup soy mince
1 tsp thyme
1/2 tsp salt
3/4 cup lukewarm water
1/2 cup grated oats
1/2 onion, finely chopped
3 garlic cloves, finely chopped
2 tbsp soy sauce
2 tbsp ketchup
2 tbsp nutritional yeast
1 tbsp mustard
1 tsp molasses
2 tsp sweet paprika
1 tsp cumin
1/2 tsp smokey paprika
1/2 tsp chili flakes
black pepper
2 – 3 tbsp cornflour
Olive oil
For the wraps
4 Arabic pitas
1 tomato, sliced
1/2 onion, sliced
1/4 bunch of parsley, finely chopped
4-6 tbsp Vegan Russian Salad by Condito The Green Line
Method:
For the soy kebab
In a bowl, mix the soy mince, thyme and salt. Add the water, mix well and set aside for 15 minutes until the liquid is absorbed.
Add all the remaining ingredients except the olive oil and mix well. Knead the mixture for 1 minute, cover and transfer to the refrigerator for 40 minutes to allow the flavors to blend well and the mixture to firm.
Preheat your oven to 200 C. Remove the mixture from the fridge and form a kebab. Place them on a baking tray lined with parchment paper. Drizzle with a little olive oil and bake for about 25 to 30 minutes.
For the wraps
Spread some Vegan Russian Salad on each pita. Add one kebab. Add some tomato, onion, and parsley. Wrap and enjoy!
