Ingredients for 6 kourou cheese pies:
For the dough
250 gr all-purpose flour
250 gr whole wheat flour
1 tsp baking powder
200 gr olive oil
160 gr soda
1 tbsp white vinegar
For the filling
250g of Vegan Spicy Spread with Red Sweet Peppers by Condito The Green Line
For the coating
50 ml vegan almond drink
20 gr oats – 20 gr sesame (mixed in a bowl)
Method:
In a large bowl add all the liquid ingredients: olive oil, baking soda and vinegar. In another large bowl add all the solid ingredients: all-purpose flour, whole wheat flour, baking powder and mix well with an egg beater. Combine the liquids with the solids mixing with a spatula. Once combined, knead for 2-3 minutes by hand.
Shape the dough into balls, transfer to a clean bowl and cover with a clean cotton towel. Leave the dough to rest for 20 minutes. Divide the dough in half. Transfer to a baking sheet lined with non-stick paper and roll out to a thickness of about 0.5 cm. Roll out the dough into a rectangular shape and divide it with a knife into 6 smaller rectangles. Add 1 tbsp of the Vegan Spicy Spread with Red Sweet Peppers and close each pie into a triangle. Seal it by pressing on its edges using a fork.
Brush the cheese pies with the vegan almond drink. Dust with the mixture of oats and sesame. Bake in a preheated oven at 180°C for 18 minutes. Remove from the oven, let them cool slightly and enjoy!
