Ingredients for 4 servings:
For the red pepper sauce:
4 tbsp Mayo Vegan Sauce by Condito The Green Line
2 tbsp roast pepper paste
1 tbsp red wine vinegar
For the cauliflower:
1 small cauliflower cut into small pieces
1 tsp smoked paprika
1 tsp curry powder
2 cloves garlic, finely chopped
1 tsp dry oregano
2 tbsp olive oil
salt and pepper
To serve:
fresh herbs
Method:
Prepare the red pepper sauce. Mix the Mayo Vegan Sauce, with the red wine vinegar and the roast pepper paste until it is homogeneous.
Preheat the oven to 180oC. Lay out some parchment paper on the tray you will be using. Add the cauliflower, smoked paprika, curry powder, garlic, oregano, then pour in the olive oil, season with salt and pepper, and mix. Roast for about 20 minutes or until the cauliflower is well cooked.
When the cauliflower is ready, you can serve it. Spread a little of the pepper mayonnaise sauce you prepared on a dish. On top, place the cauliflower, garnish with fresh herbs and add the pepper mayonnaise sauce on the side.
