Ingredients for 2 sandwiches
For the sauce
350 g boiled chickpeas
5 tbsp Mayo Vegan Sauce by Condito The Green Line
1 tbsp mango chutney
1/3 tsp turmeric
1 tsp curry powder
3 tbsp raisins
1/2 tsp salt
1/3 tsp pepper
Assembling your sandwich
4 slices of sourdough bread
4 small lettuce leaves
onion pickles
Method:
Strain the chickpeas from any water. Add them to a bowl and mash them with a fork. You don’t want them to be mushed completely, leave some smaller and larger pieces for texture.
Add the Mayo Vegan Sauce, mango chutney, turmeric, curry, raisins, salt and pepper to the chickpeas, and mix.
Toast the bread until crispy on both sides.
Assemble the sandwich by placing two lettuce leaves on each of the two slices of bread, top with the chickpea mixture and onion pickle.
Close your sandwich by putting the two bread slices together and serve with chips or fries.
