Ingredients for 6 servings
1 kg baby potatoes
2 tbsp olive oil
1 tbsp thyme
Salt, pepper
3/4 cup soy yoghurt
1/4 cup Mayo Vegan Sauce with Smoked Chili Flakes
1/2 lemon, juice only
1 tbsp chopped dill
1 tbsp chopped parsley
1 spring onion
Instructions:
Wash the potatoes well, place them in a pot with cold water and boil for about 15-20 minutes.
Strain the potatoes well, spread them out on a large baking sheet lined with parchment paper, and press them down with the bottom of a glass. Sprinkle with olive oil, thyme, salt, and pepper. Bake in a preheated oven at 220°C for about 30-40 minutes, until crispy.
In a bowl, add the soy yoghurt, Mayo Vegan Sauce with smoked chilli flakes, lemon juice, and herbs. Mix the sauce ingredients and add the potatoes. Stir well and enjoy!
