Ingredients for 2 wraps:
For the tofu doner
200g plain tofu
200g smoked tofu
2 tbsp soy sauce
1 tbsp ketchup
1 tbsp nutritional yeast
1 tbsp mustard
1 tsp sriracha
1 tsp sweet paprika
1 tsp ground coriander seeds
1/2 tsp cumin
1/4 cup water
For the wraps
2 tortillas
1/2 tomato, sliced
1/2 onion, sliced
1/4 bunch of parsley, finely chopped
3 – 4 tbsp Vegan Tzatziki by Condito The Green Line
Method:
Slice the tofu very thin (2 mm) using a knife or grater. In a bowl, mix together all the ingredients for the marinade. In a frying pan over medium-high heat, add the olive oil. Once hot, add the tofu and sauté until golden for about 10 minutes. Add the marinade and continue cooking until all the liquid is absorbed.
Spread a tablespoon or two of the Vegan Tzatziki on a tortilla, add the tofu, a few slices of tomato, onion and some parsley.
Wrap and enjoy.
