Ingredients for 2 sandwiches:
4 slices of bread
4 tsp Mayo Vegan Sauce by Condito The Green Line
1 spring onion, finely chopped
2 pickled cucumbers, finely chopped
4 slices Classic Style, Edam flavour vegan cheese alternative Condito The Green Line
4 tomato slices
some finely chopped lettuce
Method:
Preheat the oven to 180oC. Add the mayo, spring onion, and pickles to a bowl, and mix.
Place two slices of bread on your chopping board and add two Edam-style cheese slices on each. Spread the mayo with the spring onion and pickles that you prepared earlier, the lettuce, and the tomato. Top with the second slice on top.
Roast for about 10 minutes, until the Edam-style cheese is well-melted. Cut in half and serve. Alternatively, you can toast the sandwich in a toaster or in a frying pan, using no fat, on medium heat.
