Ingredients for 4 vegan hot dogs:
8 medium size carrots, like sausages
200 gr. warm vegetable broth
2 tbsp soy sauce
2 tbsp red wine vinegar
1 tsp maple syrup
1 garlic clove, finely chopped
1 tsp smoked paprika
To serve:
4 hot dog buns

sliced cherry tomatoes
avocado slices
Method:
Prepare the carrots. You are going to boil them for a short while and then roast them in the oven. Preheat the oven to 180oC with the fan on. Peel the carrots and place them in boiling water for 10 minutes.
Use a 20×26 oven tray (a size that fits your carrots exactly) to roast the carrots. Add the vegetable broth, soy sauce, vinegar, maple syrup, garlic, and paprika to the oven tray and mix well. As soon as you have finished boiling the carrots, transfer them to the tray with the marinade. Cover with tin foil and roast for approximately 20 minutes. Then remove the tin foil and roast for another 10 minutes, until the carrots are well roasted.
Cut the buns open and place them in the hot oven for a few minutes. Spread the Mayo Vegan Sauce, add the carrots, avocado, lettuce, cherry tomatoes, and serve.
