Jacket Potatoes with Mayo Vegan Sauce, tofu and vegetables

PREP TIME: 30’ 

COOK TIME: 1 HOUR & 20’

Ingredients for 2 servings:

 

4 medium potatoes

160 gr of your prefered Mayo Vegan Sauce by Condito The Green Line

1 small onion, finely chopped

3 green onions, finely chopped

200 gr vegan cheese, grated

150 gr smoked tofu, cut into cubes

150 gr cherry tomatoes, cut in half

salt

pepper

olive oil for the pan

Method:

Clean the potatoes thoroughly using the green surface of a sponge under running water. Boil them in salted water for about 60 minutes at a moderate temperature, until they turn soft inside. Let them come to room temperature.

Cut the top of the potatoes and place them in a pan. Using a spoon, hollow out the potatoes, leaving a shell of about 1 cm in thickness. Put the potato crumbs in a bowl. Add the onion, green onions, tofu, cherry tomatoes, salt and pepper. Mix well. Add the Mayo Vegan Sauce of your choice and mix together. Finally, fill the potatoes with the mixture and add a little grated cheese on top. Bake in a preheated oven at 180°C for about 15-20 minutes.
