Ingredients for 4 servings (1 large salad)
For the salad:
200 g iceberg lettuce
4-5 celery stalks
2 spring onions, chopped
2 cups peas, boiled
10 radishes, sliced
For the herb sauce:
2 tbsp Mayo Vegan Sauce by Condito the Green Line
1 ripe avocado
1 cup rocket
1 cup herbs, chopped
1 lemon, juice only
For serving:
Walnuts
Instructions:
Prepare the salad base. Chop the iceberg lettuce and place it in a bowl. Add the celery, spring onions, peas, radishes, and toss. In a food processor, combine the Mayo Vegan Sauce, avocado, rocket, herbs, and lemon juice. Blend until smooth. Toss with the vegetables, add the walnuts, toss again, and serve.
