Ingredients for 1 loaf:
For the dough
2 tbsp yeast
3 tbsp sugar
180 gr (3/4 cup) soy milk
300 gr (2 & 1/3 cup) all-purpose flour
60 gr melted vegan margarine
1 tsp salt
For the filling
100 gr vegan grated yellow cheese (1 cup)
4 tbsp Mayo Vegan Sauce by Condito Green Line
10 gr chopped parsley
1/2 tbsp salt
Method:
Heat the soy milk until it is warm to the touch. In a large bowl, put the yeast and sugar. Add the warm milk and leave the yeast to activate for about 10 minutes. The mixture should swell and blister. Add the melted margarine, flour and salt to the yeast mixture and mix for 5 minutes until a soft dough is formed. With lightly floured hands, form a ball of dough.
Put the dough in an oiled bowl, cover it with a towel and leave it in a warm place for an hour and a half. You can preheat the oven to the lowest temperature and place it there instead. The dough should rise and double in size.
In the meantime, prepare the filling by mixing all the ingredients really well together in a bowl.
When the dough is ready, press it to let the air out and place it on a lightly floured surface. Divide into 4 pieces. Roll out the first piece with a rolling pin in a round shape, place it in a baking sheet lined with non-stick paper and spread 1/3 of the filling on the top part of the sheet. Roll out the second piece of dough and place it on top of the first one carefully and spread half of the remaining filling on top. Repeat with the third piece of dough and the rest of the filling. Roll out the last piece and place it on top of the others. Cut the edges to form a perfect circle and leave the pieces of dough you cut aside.
Place a glass in the middle of the circle and press lightly for its imprint. Start from one end of the inner circle and cut the dough all the way to the end on all sides, in the shape of a cross. You will now have four pieces. Divide each of the four pieces into three smaller ones. Grab two pieces and twist them together 3 times using circular motions as you move outwards, joining them at the end by pressing them together. Repeat the same process with all of the pieces. Shape the remaining pieces of dough that you left aside into any form you like and also place those on the baking sheet lined with non-stick paper. Cover with a towel and let the dough rest for 20 minutes.
Preheat the oven to 180 οC for 10 minutes.
Brush the bread with soy milk and bake for 25 minutes.
Enjoy it preferably while hot, but even if cold it’s equally delicious!
