Ingredients for 4 servings:
For the soy roll
3 cups soy mince
2 cups hot water
1 cup chopped parsley
1 onion
1 garlic clove
1 tbsp tomato paste
1 tbsp mustard
1 tsp curry
1/2 tsp cayenne pepper
2 tbsp liquid tobacco
1 tsp pepper
1 tsp salt
1 tbsp oregano
1 cup breadcrumbs
For the filling
1 large Florina pepper
6 slices of yellow vegan cheese alternative
For the soy roll spread
1 tbsp tomato paste
3 tbsp olive oil
For serving

Method:
Put the soy mince in a large bowl and add the hot water. Stir and set aside for 15 minutes. Grate the onion and garlic in a food processor or grater and add to the mince. Add all the remaining ingredients and knead well. Cover the mixture and place in the refrigerator for an hour to rest.
Wash and chop the Florina pepper and roast it in a non-stick pan for about 5 minutes. Remove the soy mince mixture from the refrigerator and spread it out on a special baking sheet, which has wax paper on one side and aluminum foil on the other. Otherwise just make two layers, one of foil and one of parchment paper. Spread the soy mince on the parchment paper and form a rectangle. Roll up the mixture and press it lightly with your hands to seal it. Wrap with the foil and bake in a preheated oven at 180 grad for 30 minutes.
Mix the tomato paste and olive oil in a small bowl. Remove the rolls from the oven, brush them with the tomato paste and olive oil mixture using a pastry brush, and return the roll to the oven with its wrapper open for another 30 minutes. Allow to cool slightly before cutting and serving.
Serve with Vegan Tzatziki and baked potatoes or rice.
