Ingredients for 3 tortillas:
For the mushroom gyro
500 gr Pleurotus mushrooms
50 ml extra virgin olive oil
1 tsp hot paprika
1 tsp curry
1 tsp cumin
1 tsp sweet paprika (bukovo)
1 tsp salt
For serving
4 tbsp Mayo Vegan Sauce by Condito The Green Line
3 tortillas
1 avocado (cut into thin slices)
150 gr cherry tomatoes
1 handful of rocket
Method:
Cut the mushrooms into slices. Heat the olive oil in a large frying pan and add the mushrooms and all the spices. Saute until they drain their liquids, stirring regularly. Once the mushrooms are ready, start preparing the wraps.
Spread the mushrooms on the tortillas, add the Mayo Vegan Sauce and then the avocado, the cherry tomatoes. Wrap the tortillas and enjoy.
