Ingredients for 1 salad:
For the chickpeas
100 gr boiled chickpeas
30 ml olive oil
1 tsp smoked paprika
1 tsp sweet paprika
1/2 tsp cumin
salt
pepper
For the salad
200 gr green salad mix
50 gr Mayo Vegan Sauce by Condito The Green Line
1 Greek sesame bread ring
100 gr vegan parmesan
80 gr sun-dried tomatoes
Method:
For the chickpeas
Put the chickpeas in a pan and add all the other ingredients and mix well. Bake in a preheated oven at 180°C for 15 minutes. Take the chickpeas out of the oven and let them come to room temperature.
For the salad
Cut the Greek sesame bread ring into thin slices and bake in the oven for 5-6 minutes, to make it into slightly crispy crouton bites. In a large bowl, add the green salad mix and the Mayo Vegan Sauce. Add the vegan parmesan and toss the salad to mix well. Then add the chickpeas, the koulouri croutons and the sun-dried tomatoes. Mix again and serve.
