Ingredients for 4 servings / one large bowl of salad:
For the Mayo Vegan Sauce with lime:
4 tbsp Mayo Vegan Sauce by Condito The Green Line
1 lime (the zest and its juice)
2 tbsp red wine vinegar
10 mint leaves
For the sauce:
8 carrots
1 small cucumber
1 tsp salt
2 grapefruits
fresh herbs
2 green onions, finely chopped
For serving:
10 large dates
fresh herbs
Method:
Prepare the Mayo Vegan Sauce with lime. Add all its ingredients in a food processor and blend until you have nice sauce.
Remove the pits from the dates and roast them on a hot pan. Remove from heat and cut them into large pieces.
It’s time to prepare the salad. Wash the carrots and thinly slice them with a peeler. Cut the cucumber in half, remove its seeds with a knife and cut it in thin slices. Wash the grapefruits and cut them in slices.
Add the herbs, the green onions, mix with the sauce you prepared, and serve.
