Makes one large salad / serves 4:
For the salad:
2 cups white cabbage, finely chopped
2 carrots, finely chopped
2 red peppers, finely chopped
2 spring onions, finely chopped
10 pickled cucumbers, finely chopped
2 chili peppers, finely chopped
2 tbsp lemon juice
2 tbsp olive oil
salt and pepper
For the sauce:
2 tbsp Mayo Vegan Sauce by Condito The Green Line
2 tbsp lemon juice
1 tbsp Condito mustard
To serve:
2 tbsp raw or roasted, finely chopped walnuts
Method:
Prepare the sauce. Add all the ingredients to a bowl and mix until you have a homogeneous sauce.
Then place all the vegetables in a bowl, add the lemon juice, olive oil, salt, and pepper, and mix. Add the sauce and walnuts, mix, and serve.
