Ingredients for 4 servings / one salad
For the dressing
2 tbsp Mayo Vegan Sauce with Truffle by Condito the Green Line
1 tbsp soy sauce
2 tbsp water
2 tbsp lemon juice
For the sweet potatoes
2 (400 g) sweet potatoes, diced
2 tbsp olive oil
Salt
Pepper
Oregano
For the rice bowl
300 g rice, boiled
100 g corn, boiled
1 ripe avocado, diced
100 g rocket
Fresh herbs
Method:
Prepare the dressing. In a jar, combine the Mayo Vegan Sauce, soy sauce, water, and lemon juice. Shake well.
Toss the sweet potatoes with the olive oil, salt, pepper, and oregano. Bake in a preheated oven at 180°C for 20 minutes.
Divide the cooked rice into 4 bowls. Add the sweet potatoes, corn, avocado, rocket, herbs, and dressing. Serve and enjoy!
